Who doesn't love a good bacon and egg roll? Here’s a great recipe that will kick start any morning.
200g Poachers bacon
8 eggs
2 avocados
4 spring onions – thinly sliced
Dash Sriracha sauce
¼ cup mayo or double cream
1 – 2 tomatoes – sliced
Handful baby spinach
4 brioche buns
Heat the griddle, when hot pop on the bacon. Skin and mash the avocados in a bowl, add the mayonnaise or double cream, onions, Sriracha sauce to taste and season. Halve the buns horizontally and place on the griddle to toast the cut side only. Now fry the eggs in a hot pan.
Spread the avocado mix on the bun bases. Add a slice or two of tomato, some spinach, two eggs and two slices of bacon, top with some more spinach and pop on the top.
