Winemaking Notes

Handpicked fruit was destemmed and fermented in open top fermenters before being transferred to French oak barriques, 5% new. Matured for 11 months before bottling in February 2023.

Yet another year of abundant rainfall in the Hilltops NSW wine region, mild and disease free summer conditions produced abundant clean fruit. Sadly our estate vineyard got completely wiped out by a freak hail storm hence the supply from Hilltops.
