Serves 2
1 Poachers Pantry smoked chicken thigh
2 tomatoes – chopped
3 radish thinly sliced
1 avocado halved and scooped from its skin
20g pickled cucumbers
10g parsley – finely chopped
10g coriander – finely chopped
Salad leaves
100g hummus
50g labneh
2 lemon wedges
In two bowls, place the salad leaves then add all the ingredients (keeping them separated in the bowl). Add a wedge of lemon to be squeezed over the top. Serve!
