Serves 2 for light meal.
200g Poachers Sicilian smoked chicken breast, sliced
1/2 cup good quality basil pesto sauce
1 pre-baked pizza base
1/4 cup sliced sundried tomato strips
1 cup artichoke hearts, drained well and sliced
1/3 cup sliced mozzarella cheese
1/4 cup shredded tasty cheese
Preheat the oven to 230 degrees Celsius. Spread pesto sauce over the pizza base. Arrange chicken pieces, sundried tomatoes and artichoke hearts over the sauce, and sprinkle with cheeses.
Bake for 8 to 10 minutes in the preheated oven, until cheese is melted and lightly browned at the edges.
Accompany with fresh green salad.
