Serves 2
200g x Sliced Poachers Pastrami
3 x small zucchinis
1 x brown onion
4 x button mushrooms
1 x red capsicum
1 x cos lettuce
200g x egg mayonnaise
Slice all the vegetables and scorch in a pan until they are coloured. Put aside.
Warm pastrami in pan.
Pull apart the lettuce and assemble on platter with scorched vegetables and pastrami. Dollop the mayonnaise over the platter or serve on the side.
Enjoy with a glass of Poachers Riesling.
